4 medium zucchinis

1 cup cherry tomatoes, halved

1 cup cooked quinoa

1/2 cup feta cheese, crumbled

1/4 cup Kalamata olives, pitted and chopped

1/4 cup red onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/4 teaspoon red pepper flakes (optional for heat)

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Slice each zucchini in half lengthwise and carefully scoop out the center using a spoon or melon baller, leaving about 1/4 inch of the zucchini flesh intact. This will create a sturdy boat to hold the filling.

    Make the Filling: In a spacious mixing bowl, combine the chopped zucchini flesh, halved cherry tomatoes, cooked quinoa, crumbled feta cheese, chopped Kalamata olives, finely chopped red onion, minced garlic, dried oregano, dried basil, red pepper flakes (if using), olive oil, and a generous pinch of salt and pepper.
