1 medium cucumber, peeled and diced into small cubes

1/4 cup fresh parsley, finely chopped

2 tablespoons balsamic vinegar

2 tablespoons extra virgin olive oil

1 teaspoon fresh lemon juice

Salt and freshly cracked black pepper, to taste

Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for toasting the baguette slices.
