1 cup quinoa, thoroughly rinsed

2 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup chickpeas, drained and rinsed

1 ripe avocado, diced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup crumbled feta cheese (optional)

Juice of 1 large lemon

Zest of 1 lemon

3 tablespoons extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Optional: fresh arugula or spinach for serving

Prepare the Quinoa: In a medium-sized saucepan, bring the vegetable broth (or water) to a full boil. Once boiling, add the rinsed quinoa, then reduce the heat to low. Cover with a lid and allow it to simmer for about 15 minutes, or until the quinoa is tender and all the liquid is absorbed. After cooking, remove the saucepan from heat and let it sit, covered, for 5 more minutes. Fluff the quinoa gently with a fork to separate the grains.
