2 cups fresh corn kernels (from about 3-4 ears of corn) or 1 can of corn, drained and rinsed

1 ripe avocado, diced into bite-sized pieces

1 medium red onion, finely chopped

1 small jalapeño, finely diced (seeds removed for less heat)

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Juice of 2 limes, freshly squeezed

1/2 teaspoon ground cumin

Salt and pepper, to taste

Prepare the Corn: If using fresh corn, stand an ear vertically on a cutting board and run a sharp knife down the sides to remove the kernels. If you opt for canned corn, simply drain and rinse it under cool water.

    Mix the Ingredients: In a large mixing bowl, combine the corn kernels, diced avocado, finely chopped red onion, diced jalapeño, and halved cherry tomatoes. Use a spatula or spoon to gently mix the ingredients without mashing the avocado.
