4 cups of seedless watermelon, cut into 1-inch cubes

2 tablespoons of freshly squeezed lime juice

1 teaspoon of Tajín seasoning (plus extra for serving)

Optional: fresh mint leaves, rinsed and dried for garnish

Prepare the Watermelon: Begin by carefully cutting the watermelon into 1-inch cubes. Make sure to pick out any seeds you come across to ensure a smooth texture.

    Blend the Mixture: In a high-speed blender, combine the cubed watermelon, freshly squeezed lime juice, and 1 teaspoon of Tajín seasoning. Blend on high until the mixture is completely smooth and all ingredients are well integrated.

      Strain (Optional): For those who prefer an exceptionally smooth texture, you may strain the blended mixture through a fine mesh sieve. This step removes any watermelon pulp, but it's entirely optional based on your texture preference.

        Pour into Molds: Carefully pour the watermelon mixture into your popsicle molds, filling each one about three-quarters full. This extra space will accommodate the mixture as it expands during freezing.

          Insert Sticks: Gently insert a wooden popsicle stick into the center of each mold. Ensure that the stick stands upright and remains centered for even freezing.

            Freeze: Transfer the molds to your freezer and allow them to freeze for at least 4-6 hours. They should be solid to the touch when ready.

              Serve: To remove the pops from the molds, briefly run warm water over the outside of the molds to loosen them. Carefully pull out each pop, and if you like, sprinkle a little extra Tajín on top for an added zesty kick.

                Garnish (Optional): For a refreshing finish, garnish each popsicle with a sprig of fresh mint leaves just before serving. This adds a beautiful pop of color and flavor.
