Ingredients

1 small seedless watermelon

200g feta cheese, cubed

1 cup fresh mint leaves

1 tablespoon balsamic glaze (optional)

Freshly cracked black pepper (to taste)

Skewers (8-10 inches long, wooden or metal)

Instructions

Prepare the Watermelon:

Start by slicing the watermelon into 1-inch cubes. If you come across any seeds (if using a seeded watermelon), make sure to remove them. Once cut, pat the cubes dry with a paper towel to eliminate excess moisture, which helps maintain the integrity of the skewers.

      Cube the Feta:

Cut the feta cheese into uniform 1-inch cubes, similar in size to your watermelon pieces. This ensures a balanced flavor in every bite.

          Assemble the Skewers:

Take a skewer and begin threading your ingredients. Start with a piece of watermelon, then add a fresh mint leaf (fold it in half if it’s too large), followed by a cube of feta. Continue this pattern, adding 3-5 sets of watermelon, mint, and feta onto each skewer, depending on the skewer length and your personal preference, leaving a small space at the end for easy handling.

              Drizzle with Balsamic Glaze:

Once all skewers are assembled, if you wish to elevate the flavor, drizzle a small amount of balsamic glaze over the top. This not only enhances the taste but also adds a beautiful gloss, making the skewers more visually appealing!

                  Season:

Finish off by sprinkling freshly cracked black pepper over the skewers to provide a delightful zing that complements the sweetness of the watermelon and the creaminess of the feta.

                      Chill and Serve:

To achieve the best flavor experience, cover the skewers and let them chill in the refrigerator for at least 15-30 minutes before serving. This chilling time will enhance the fresh flavors and allow them to meld together beautifully. Present the skewers cold on a platter, making for a refreshing appetizer or snack!
