Watermelon Lemonade Pops

4 cups of seedless watermelon, cubed

1 cup of freshly squeezed lemon juice (approximately 4-6 lemons)

1/2 cup of honey or maple syrup (adjust depending on your sweetness preference)

1 cup of cold water

Zest of 2 lemons

Optional: fresh mint leaves for garnish

Prepare the Watermelon: Begin by cutting the watermelon into small cubes and placing them in a blender. Blend until smooth to create a refreshing watermelon juice. For a silkier texture, strain the juice through a fine mesh sieve to eliminate the pulp; however, this is entirely optional.

    Combine Ingredients: In a large mixing bowl, pour in the freshly blended watermelon juice. Add the freshly squeezed lemon juice, honey or maple syrup, cold water, and the zest from the lemons. Stir the mixture thoroughly until the sweetener is completely dissolved and all ingredients are well incorporated.

      Taste Test: Before you transfer the mixture into popsicle molds, taste it! If you desire more sweetness, feel free to add additional honey or a splash more lemon juice to perfect the flavor to your liking.

        Pour into Molds: Carefully pour the vibrant mixture into your popsicle molds, ensuring to leave a small gap at the top to allow for expansion during freezing.

          Insert Sticks: If your popsicle molds include sticks, place them into the center of each mold. If your molds do not feature lids, you can cover them with aluminum foil to securely hold the sticks in place during freezing.

            Freeze: Transfer the molds to the freezer and allow them to freeze for at least 4 to 6 hours, or until they are completely solid.

              Unmold the Pops: To unleash your frozen treats, run warm water over the outside of the molds for a few seconds. This will help loosen them so you can gently pull the pops out.
