Ingredients

3 cups rolled oats

1 cup unsweetened shredded coconut

1/2 cup sliced almonds

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/2 teaspoon sea salt

1 teaspoon ground cinnamon

1 cup mixed dried fruits (such as cranberries, apricots, and banana chips)

Instructions

Preheat the Oven: Begin by preheating your oven to 325°F (160°C). Line a large baking sheet with parchment paper to prevent sticking.

Combine Dry Ingredients: In a spacious mixing bowl, pour in the rolled oats, shredded coconut, sliced almonds, sea salt, and ground cinnamon. Stir the mixture thoroughly until all the dry ingredients are evenly blended.

Mix Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until smooth and well combined.

Combine Wet and Dry Mixtures: Gradually pour the wet mixture into the bowl with the dry ingredients. Stir gently but thoroughly until all the oats and nuts are nicely coated with the mixture.

Form Clusters: Scoop the granola mixture onto the prepared baking sheet, spreading it out evenly. Using the back of a spatula, press the mixture down firmly to help form clusters as it bakes.

Bake: Place the baking sheet in the oven and bake for approximately 25-30 minutes, or until the granola is a beautiful golden-brown color. Remember to stir the mixture halfway through the baking time to ensure an even toast.

Cool and Add Fruits: When your granola is ready, carefully remove it from the oven and allow it to cool completely on the baking sheet. Once cooled, gently break it into clusters and mix in your choice of dried fruits for added flavor and sweetness.

Store: Transfer the cooled granola clusters into an airtight container. They can be stored at room temperature and will stay fresh for up to two weeks.
