1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned, drained)

1 cup mild salsa

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

8 small flour tortillas

2 cups shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1/2 cup sour cream

Fresh cilantro for garnish (optional)

Sliced jalapeños for garnish (optional)

      Assemble the Tortillas: Lay your flour tortillas flat on a clean surface. Take about 1/4 cup of the chicken mixture and spoon it onto the center of each tortilla. Carefully roll up each tortilla tightly, tucking the sides in, and place them seam-side down in a greased 9x13 inch baking dish.
