1 ripe mango, diced into small cubes

2 tablespoons maple syrup (honey can be used if preferred)

1 teaspoon vanilla extract

A pinch of salt

Start by pouring the almond milk into a medium mixing bowl. Add the chia seeds, maple syrup, vanilla extract, and a pinch of salt. Using a whisk, blend all the ingredients thoroughly to ensure there are no clumps of chia seeds remaining.

    Allow the mixture to sit for approximately 10 minutes. After the resting period, whisk the mixture again to break up any clumps that may have formed as the chia seeds begin to absorb the liquid.

      Once whisked, cover the bowl securely with plastic wrap or transfer the mixture into individual serving jars. Place it in the refrigerator for a minimum of 3 hours, or preferably overnight. This will enable the chia seeds to swell, resulting in a delightful pudding-like texture.

        When you’re ready to serve, take the pudding out of the refrigerator and give it a gentle stir. Spoon half of the chia pudding into serving glasses, filling them evenly.
