4 slices of bacon, chopped

1 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 teaspoon smoked paprika

2 large eggs

1/2 cup milk

1/4 cup green onions, finely sliced

1/2 cup crumbled feta cheese (optional)

Vegetable oil for frying

Cook the Bacon: In a large skillet over medium heat, add the chopped bacon and cook until it turns crispy, about 5-7 minutes. Use a slotted spoon to remove the bacon from the skillet and place it on a plate lined with paper towels to absorb excess grease. Leave approximately 1 tablespoon of bacon fat in the skillet to infuse the fritters with flavor.

    Prepare the Batter: In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, black pepper, and smoked paprika. Whisk together until well mixed and free of lumps.

      Combine Wet Ingredients: In a separate small bowl, whisk together the eggs and milk until fully combined. Gradually pour the egg mixture into the bowl with the dry ingredients and mix gently. Stir just until the mixture is combined; avoid over-mixing to keep the fritters light.
