Sweet Chili Glazed Chicken Pita Wraps

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs

1/2 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon freshly squeezed lime juice

1 teaspoon minced garlic

1 teaspoon grated fresh ginger

Salt and pepper to taste

4 whole wheat pita pockets

1 cup shredded lettuce

1 cup shredded carrots

1/2 cup cucumber, thinly sliced

1/4 cup fresh cilantro, chopped

Optional: sliced jalapeño for extra heat

Instructions
 

Marinate the Chicken:

    In a medium mixing bowl, whisk together the sweet chili sauce, soy sauce, sesame oil, lime juice, minced garlic, grated ginger, and a pinch of salt and pepper. Add the chicken thighs to the marinade, making sure they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours to enhance the flavors.

      Cook the Chicken:

        Preheat your grill pan or outdoor grill to medium-high heat. Once hot, remove the chicken from the marinade, allowing any excess marinade to drip off. Grill the chicken thighs for approximately 6-7 minutes per side, or until they are cooked through and have a nice char (look for an internal temperature of 165°F/75°C). After cooking, transfer the chicken to a plate and let it rest for 5 minutes before slicing into strips.

          Prepare the Pita:

            While the chicken is resting, warm the pita pockets to enhance their texture. Place them on the grill for about 1 minute on each side until soft and pliable. Alternatively, you may heat them in a conventional oven at 350°F (175°C) for about 5 minutes.

              Assemble the Wraps:

                Gather your warmed pita pockets and open each one gently. Start by adding a generous handful of shredded lettuce and shredded carrots to each pocket. Next, layer the sliced chicken on top. Follow with the sliced cucumber, a sprinkle of fresh cilantro, and optional sliced jalapeño for those who crave an extra spicy kick.
