Ingredients

1 lb (450g) boneless, skinless chicken thighs

1 cup fresh pineapple, diced (or canned pineapple, drained)

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon sriracha (adjust to taste for spice)

1 tablespoon rice vinegar

1 teaspoon garlic powder

1 teaspoon ginger powder (or 1 inch fresh ginger, minced)

1 tablespoon cornstarch

1 tablespoon vegetable oil

1/4 cup scallions, chopped (for garnish)

Sesame seeds (for garnish)

Salt and pepper, to taste

Instructions

Marinate the Chicken: In a medium mixing bowl, whisk together the soy sauce, honey, sriracha, rice vinegar, garlic powder, ginger powder, salt, and pepper until combined. Add the chicken thighs, ensuring each piece is thoroughly coated in the marinade. Cover the bowl with plastic wrap or a lid, and refrigerate for at least 30 minutes (up to 2 hours if time permits, for enhanced flavor).

Prepare for Cooking: After marinating, take the chicken out of the refrigerator. If you're using fresh pineapple, chop it into bite-sized pieces and set it aside for later.

Cook the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Take the chicken thighs out of the marinade, reserving the marinade for later. Place the chicken in the skillet and cook for approximately 5-7 minutes on each side, or until the chicken is nicely browned and fully cooked (ensure the internal temperature reaches 165°F/75°C).

Thicken the Sauce: In a small bowl, create a slurry by mixing the reserved marinade with the cornstarch until smooth. After the chicken has cooked through, add the diced pineapple to the skillet with the chicken. Pour the cornstarch slurry over the chicken and pineapple, stirring well to combine. Allow the mixture to simmer for an additional 3-5 minutes, or until the sauce thickens and becomes glossy.

Garnish and Serve: Once your sauce has thickened and the pineapple is warmed through, remove the skillet from heat. Serve your delicious Sweet and Spicy Pineapple Chicken over a bed of steamed rice or quinoa. Finish with a generous sprinkle of chopped scallions and sesame seeds for added flavor and crunch. Enjoy your enticing culinary creation!
