1 cup raw almonds

1 cup Medjool dates, pitted (approximately 10-12 dates)

1/2 cup rolled oats (use gluten-free oats if necessary)

2 tablespoons almond butter

1 tablespoon honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

A pinch of sea salt

1/4 cup shredded coconut (optional, for rolling)

1/4 cup dark chocolate chips (optional, for added sweetness)

Instructions
 

Prepare the Almonds: Begin by placing the raw almonds in a food processor. Pulse them until they reach a fine meal consistency, ensuring you stop before they turn into almond butter.

    Combine Ingredients: To the almond meal, add the pitted Medjool dates, rolled oats, almond butter, honey or maple syrup, vanilla extract, ground cinnamon, and a pinch of sea salt.

      Blend: Pulse all the ingredients together until they’re thoroughly mixed. The mixture should be sticky and cohesive, resembling a dough.

        Taste Test: Sample the mixture. If you prefer a sweeter flavor, add a few dark chocolate chips and pulse again to incorporate.

          Form the Balls: With your hands, scoop about a tablespoon of the mixture and roll it into a ball shape. Continue this process until all dough is formed into balls.
