Ingredients

1 package of pizza dough (store-bought or homemade)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 small zucchini, thinly sliced

1 small bell pepper (any color), diced

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

1 cup baby spinach

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

Marinara sauce (for dipping)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). While the oven heats up, line a baking sheet with parchment paper to prevent sticking.

Prepare the Filling: In a large mixing bowl, combine the ricotta, mozzarella, and Parmesan cheeses. Add the thinly sliced zucchini, diced bell pepper, halved cherry tomatoes, thinly sliced red onion, and baby spinach. Drizzle the mixture with olive oil, and then sprinkle in the dried oregano, garlic powder, as well as salt and pepper to taste. Stir gently until all ingredients are evenly mixed and coated.

Roll Out the Dough: On a lightly floured surface, take the pizza dough and roll it into a large rectangle measuring approximately 10x14 inches. Ensure the dough is an even thickness throughout for uniform baking.

Spread the Filling: With a spatula or the back of a spoon, evenly spread the veggie and cheese mixture over the dough, leaving about a half-inch border around the edges to prevent spillage while rolling.

Roll it Up: Starting from one of the longer edges, carefully roll the dough away from you, forming a tight log. Once rolled, pinch the edge securely to seal the roll, ensuring the filling stays inside during baking.

Slice the Rolls: Using a sharp knife or pizza cutter, slice the rolled dough into 1-inch thick pieces, making about 12 rolls. Arrange the slices on the prepared baking sheet with the cut sides facing up; this will showcase the colorful filling.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes. Keep an eye on them, and look for a golden brown color on the dough, indicating they are beautifully cooked through.

Serve: After removing the pizza rolls from the oven, allow them to cool for a few minutes. Serve them warm alongside a small bowl of marinara sauce for dipping, enhancing the experience.
