Ingredients

1 ½ cups all-purpose flour

½ cup almond flour

¾ cup granulated sugar

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

Zest of 1 lemon

Zest of 1 orange

1 cup mixed berries (fresh or frozen; can include blueberries, raspberries, and diced strawberries)

½ cup plain Greek yogurt

½ cup buttermilk

⅓ cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

2 tablespoons honey (optional, for added sweetness)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or greasing it lightly with cooking spray.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, almond flour, granulated sugar, baking powder, baking soda, and salt until they are evenly combined. After that, add in the lemon and orange zest, mixing until you can smell the vibrant citrus fragrance.

Prepare Wet Ingredients: In a separate bowl, combine the Greek yogurt, buttermilk, vegetable oil, eggs, vanilla extract, and honey (if using). Whisk these ingredients together until they are smooth and completely blended.

Combine Mixtures: Carefully fold the wet mixture into the dry ingredients, stirring gently until just combined. Aim to keep some lumps in the batter—this aids in achieving a light texture. Avoid overmixing.

Incorporate Berries: Gently fold in the mixed berries, being cautious not to crush them during the mixing process.

Fill Muffin Cups: Using an ice cream scoop or a large spoon, fill each muffin cup about three-quarters full with the batter.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes. The muffins are done when a toothpick inserted in the center comes out clean.

Cool: After baking, remove the muffins from the oven and allow them to cool in the pan for about 5 minutes. Then, transfer them to a wire rack to cool completely.

Serve and Enjoy: These delightful Summer Muffins can be enjoyed warm or at room temperature, making them a perfect addition to your breakfast or an exquisite snack!
