2 boneless, skinless chicken breasts

8 oz. pasta (your choice, such as penne or fettuccine)

2 tablespoons olive oil, divided

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 medium zucchini, sliced into half-moons

1 bell pepper (any color), diced

1/2 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

1/4 cup grated Parmesan cheese

Salt and pepper, to taste

Zest and juice of 1 lemon

Prepare the Pasta: In a large pot, bring salted water to a rolling boil. Once boiling, add the pasta and cook according to the package instructions until al dente, typically around 8-10 minutes. Before draining, reserve 1 cup of the pasta water, then drain the pasta in a colander and set aside.

    Cook the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season both sides of the chicken breasts generously with salt and pepper. Add the chicken to the skillet and sear for about 6-7 minutes on each side, or until fully cooked and golden brown. Once done, remove the chicken from the skillet, let it rest for 5 minutes, then slice into strips.

      Sauté the Vegetables: Using the same skillet, add the remaining tablespoon of olive oil. When hot, add the minced garlic and sauté for about 30 seconds until fragrant. Next, add the halved cherry tomatoes, sliced zucchini, and diced bell pepper. Continue to sauté for 4-5 minutes until the vegetables are tender and the tomatoes begin to burst and release their juices.

        Combine All Ingredients: Return the cooked pasta and sliced chicken to the skillet. Add the chopped fresh basil, parsley, lemon zest, and lemon juice. Gently toss the mixture to combine everything thoroughly. If the pasta looks dry, gradually add the reserved pasta water until it reaches your desired sauciness, ensuring the sauce lightly coats the pasta.
