Ingredients

4 medium bell peppers (any color)

1 cup cooked quinoa

1 cup diced salami

1/2 cup sliced pepperoni

1/2 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1/2 cup cherry tomatoes, halved

1/4 cup black olives, sliced

1/4 cup fresh basil, finely chopped

1/4 cup balsamic glaze

Salt and pepper, to taste

Olive oil, for drizzling

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to prepare for baking the stuffed peppers.

Prepare the Bell Peppers: Carefully cut the tops off each bell pepper and remove the seeds and membranes inside. Rinse them under cold water to ensure they are clean. Pat them dry with a paper towel. Lightly drizzle both the inside and outside of the peppers with olive oil, and then sprinkle with salt and pepper to enhance their flavor.

Mix the Filling: In a large mixing bowl, combine the cooked quinoa, diced salami, sliced pepperoni, shredded mozzarella cheese, crumbled feta cheese, halved cherry tomatoes, sliced black olives, and finely chopped fresh basil. Use a spoon or spatula to stir the mixture until all ingredients are evenly distributed. Taste and adjust the seasoning with additional salt and pepper as needed.

Stuff the Peppers: Take a generous portion of the filling mixture and spoon it into each bell pepper. Press down gently with the back of the spoon to pack the filling firmly into the peppers, making sure to fill them completely to avoid any gaps.

Bake the Peppers: Arrange the stuffed bell peppers upright in a baking dish. Drizzle a little more olive oil over the tops for added flavor. Cover the dish tightly with aluminum foil to help them steam as they cook. Bake in the preheated oven for 25-30 minutes. After this initial baking time, remove the foil and continue to bake for an additional 10-15 minutes, or until the peppers are tender and the tops are golden brown and slightly crispy.

Drizzle and Serve: Once the peppers are done, remove them from the oven and drizzle with balsamic glaze for a sweet and tangy finish. Allow the stuffed peppers to cool for a few minutes before serving. If desired, garnish with extra chopped basil for a vibrant touch.

              Prep Time: 15 minutes | Total Time: 1 hour | Servings: 4

                - Presentation Tip: For an attractive display, arrange the stuffed peppers on a colorful serving platter and sprinkle with a few whole basil leaves around them. This will create a beautiful visual appeal that complements the delicious flavors!
