Ingredients

4 medium zucchinis

1 lb (450g) cooked chicken, shredded (rotisserie chicken works great)

1 cup BBQ sauce (choose your favorite brand or try a homemade version)

1 cup shredded cheddar cheese

1/2 cup finely chopped red onion

1/4 cup chopped fresh cilantro

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Optional: sliced jalapeños for an extra kick

Instructions

Preheat the Oven: Begin by setting your oven to preheat at 375°F (190°C). This ensures it is perfectly ready when you're set to bake the zucchini boats.

Prepare the Zucchini: Rinse the zucchinis thoroughly under cold water. Carefully slice each zucchini in half lengthwise, then use a spoon or a small melon baller to scoop out the seeds and create ‘boats.’ Lightly brush the insides of each zucchini with olive oil and season with salt and pepper to enhance the flavor.

Mix the Filling: In a large mixing bowl, combine the shredded chicken, 3/4 cup of your chosen BBQ sauce, garlic powder, onion powder, finely chopped red onion, and half of the chopped cilantro. Stir the mixture thoroughly until all the ingredients are well incorporated.

Stuff the Zucchini: Using a spoon, evenly distribute the BBQ chicken mixture into each zucchini boat, packing it lightly to ensure a satisfying bite.

Top with Cheese: Drizzle the remaining 1/4 cup of BBQ sauce over the stuffed zucchini boats. Sprinkle a generous layer of shredded cheddar cheese on top. For those who enjoy heat, layer some sliced jalapeños on top as well.

Bake: Arrange the stuffed zucchini boats in a baking dish and cover with aluminum foil. Place them in the preheated oven and bake for 25 minutes. After this time, carefully remove the foil, and continue baking for an additional 10-15 minutes, or until the cheese is bubbly and has developed a golden brown color.

Garnish and Serve: Once the zucchini boats are cooked, take them out of the oven and let them cool for a few minutes. Before serving, garnish with the remaining chopped cilantro. Serve warm and enjoy the delightful explosion of flavors!
