Ingredients

1 cup fresh spinach, chopped

1 cup mushrooms, sliced

4 large eggs

1 cup heavy cream

1 cup shredded cheddar cheese

½ cup diced onions

2 tablespoons olive oil

1 teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

1 package (1 sheet) of pre-made puff pastry

Cooking spray or butter for greasing

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and prepare a muffin tin by greasing each well with cooking spray or butter.

Sauté the Vegetables: In a large skillet, warm the olive oil over medium heat. Add the diced onions and sauté for approximately 3-4 minutes, or until they become translucent. Incorporate the sliced mushrooms and cook for an additional 5 minutes until they are browned. Finally, add the chopped spinach and sauté for about 2-3 minutes until it has wilted. Once done, remove from heat and allow the mixture to cool slightly.

Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, heavy cream, garlic powder, salt, and black pepper until fully combined. Gently fold in the sautéed vegetable mixture along with half of the shredded cheddar cheese (set aside the remainder for later).

Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet. Using a round cutter or the rim of a glass, cut circles with a diameter of about 4-5 inches. Aim to create enough circles to line the wells of your muffin tin with individual pastry cups.

Assemble the Cups: Carefully press each pastry circle into the greased muffin tin wells, ensuring that the edges form small cups to hold the filling.

Fill the Quiche Cups: Using a spoon, gently fill each puff pastry cup with the egg and vegetable mixture, filling them about three-quarters of the way full. Each cup should then be topped with the remaining shredded cheddar cheese.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg is fully set and the tops are a beautiful golden brown.

Cool and Serve: After baking, remove the quiche cups from the oven and allow them to cool in the tin for a few minutes. Carefully take them out and serve warm or at room temperature. Enjoy your delightful Savory Spinach Mushroom Quiche Cups!
