1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 jalapeño, seeded and minced (adjust according to your spice preference)

2 tablespoons olive oil

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

1 cup low sodium chicken broth

Fresh cilantro, chopped, for garnish

Avocado slices, for topping (optional)

Sour cream, for serving (optional)

Heat Olive Oil: In a large pot or Dutch oven, warm the olive oil over medium heat until shimmering.

          Simmer the Chili: Pour in the chicken broth and bring the mixture to a gentle boil.
