2 cups fresh peaches, peeled and diced

1 cup granulated sugar, divided

2 teaspoons fresh lemon juice

1 teaspoon cayenne pepper (or to taste)

1 teaspoon ground ginger

1 teaspoon ground cinnamon

2 cups all-purpose flour

1 cup rolled oats

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup unsalted butter, melted

1 large egg

1 teaspoon pure vanilla extract

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x13 inch baking dish by greasing it with butter or lining it with parchment paper for easy removal later.

    Prepare Peaches: In a medium mixing bowl, combine the diced fresh peaches with 1/4 cup of the granulated sugar, lemon juice, cayenne pepper, ground ginger, and cinnamon. Gently mix to ensure that all the peach pieces are well-coated. Allow this mixture to marinate for approximately 15 minutes, letting the flavors meld.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, rolled oats, baking powder, baking soda, and salt until they are well combined and free of lumps.

        Combine Wet Ingredients: In a separate bowl, combine the melted butter, the remaining 3/4 cup of sugar, the egg, and the vanilla extract. Whisk everything together until you achieve a smooth and homogeneous mixture.

          Combine Mixtures: Slowly pour the wet mixture into the bowl of dry ingredients. Stir gently just until everything is combined, being careful not to over-mix. The mixture should form a sticky dough.
