½ cup unsalted butter, melted

1 cup granulated sugar

½ cup packed brown sugar

3 large eggs, at room temperature

1 teaspoon vanilla extract

½ teaspoon ground nutmeg

½ teaspoon ground ginger

¼ teaspoon ground cloves

¼ teaspoon salt

2 tablespoons all-purpose flour (optional, for added thickness)

Prepare the crust: Begin by preheating your oven to 325°F (160°C). In a medium mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon. Stir until the mixture becomes well combined and crumbly. Press this mixture evenly into the bottom of a 9x13-inch baking pan lined with parchment paper, ensuring it's packed down firmly.

    Bake the crust: Place the pan in the preheated oven and bake for about 10 minutes, or until the crust turns lightly golden. Once done, remove it from the oven and let it cool in the pan while you prepare the cheesecake filling.

      Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese using an electric mixer on medium speed for about 2 minutes, until it becomes completely smooth and creamy. Add in the pumpkin puree, granulated sugar, and brown sugar. Continue mixing until all ingredients are fully incorporated and smooth.
