Ingredients

4 medium sweet potatoes, peeled and sliced into 1-inch thick rounds

3 tablespoons extra virgin olive oil

1 teaspoon smoked paprika for a rich flavor

1 teaspoon garlic powder for an aromatic essence

½ teaspoon cayenne pepper (adjust to taste for desired heat)

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

2 tablespoons fresh cilantro, finely chopped for garnish

Lime wedges, for serving

Instructions

Preheat the Grill: Begin by heating your grill to medium-high, reaching around 400°F (200°C). If you're using a charcoal grill, ensure the coals are well-lit and glowing red to create even heat.

Prepare the Sweet Potatoes: In a large mixing bowl, add the sweet potato rounds. Drizzle in the olive oil and sprinkle over the smoked paprika, garlic powder, cayenne pepper, salt, and black pepper. Toss the sweet potatoes thoroughly until each piece is coated evenly with the flavorful mixture.

Grill the Sweet Potatoes: Once the grill is hot, lightly brush the grill grates with additional olive oil to prevent sticking. Arrange the sweet potato rounds directly on the grill surface. Close the lid and grill for about 6-8 minutes on one side, allowing them to develop a smoky char.

Flip and Continue Grilling: Using a pair of tongs, carefully flip each sweet potato round. Grill for an additional 6-8 minutes on the other side. They are done when they are fork-tender and boast beautiful grill marks; the fork should easily pierce through.

Serve: After grilling, remove the sweet potatoes from the grill and place them on a decorative serving platter. Sprinkle with freshly chopped cilantro for a pop of color. Serve alongside lime wedges for a zesty burst of flavor.

Enjoy: Delight in your smoky grilled sweet potatoes as a scrumptious side dish or a tasty snack that complements any meal!
