8 oz (225g) fettuccine or spaghetti

4 oz (115g) smoked salmon, thinly sliced

2 tablespoons extra virgin olive oil

2 cloves garlic, finely minced

1 cup heavy cream

1 tablespoon Dijon mustard

1 tablespoon fresh dill, finely chopped (plus extra for garnish)

Zest and juice of 1 lemon

Salt and freshly ground black pepper, to taste

Grated Parmesan cheese, for serving

Cook the Pasta: Begin by filling a large pot with water and adding a generous amount of salt. Bring the water to a rapid boil. Once boiling, add the fettuccine or spaghetti and cook according to the package instructions until it reaches an al dente texture. Before draining, carefully reserve 1 cup of the starchy pasta water; then drain the pasta and set it aside.

    Sauté Garlic: In a large skillet, pour in the extra virgin olive oil and heat it over medium heat. Once the oil is hot, add the finely minced garlic. Sauté for about 1 minute, or until the garlic becomes fragrant; be cautious not to let it brown, as this can impart a bitter taste.

      Make the Cream Sauce: Reduce the heat to low, then pour in the heavy cream to the skillet. With a spoon, gently stir in the Dijon mustard, finely chopped fresh dill, lemon zest, and the juice of the lemon. Allow this mixture to simmer gently for 2-3 minutes, letting the flavors meld beautifully.

        Combine Pasta and Sauce: Carefully add the cooked pasta to the sauce in the skillet. Toss everything together until the pasta is well coated with the creamy sauce.
