2 lbs boneless, skinless chicken thighs

4 cups low-sodium chicken broth

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced into rounds

2 cups celery, diced

1 tsp dried thyme

1 tsp dried parsley

1/2 tsp black pepper

1/4 cup cream cheese, softened to room temperature

1 cup heavy cream

2 cups egg noodles

Salt to taste

Prepare the Chicken: Begin by placing the boneless, skinless chicken thighs evenly at the bottom of your slow cooker. Season the chicken with salt to taste, black pepper, dried thyme, and dried parsley, ensuring an even coating for flavor.
