Ingredients

4 bone-in, skin-on chicken thighs

1 teaspoon kosher salt

½ teaspoon freshly ground black pepper

1 teaspoon garlic powder

1 tablespoon extra-virgin olive oil

2 tablespoons unsalted butter, divided

3 cloves garlic, minced

½ cup low-sodium chicken broth

Juice and zest of 1 large lemon

⅓ cup finely grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions

Prepare the Chicken: Begin by patting the chicken thighs dry with paper towels to ensure a crispy skin. Season both sides generously with salt, black pepper, and garlic powder, making sure the seasonings are evenly distributed.

Heat the Skillet: In a large, heavy-bottomed skillet, add the olive oil and 1 tablespoon of butter. Heat over medium-high until the oil shimmers but does not smoke.

Cook the Chicken: Carefully place the chicken thighs skin-side down into the hot skillet. Sear for about 5-7 minutes, allowing the skin to become golden brown and crispy. Use tongs to gently flip the chicken thighs and continue to cook for an additional 5 minutes.

Add the Garlic: Once the chicken is nicely browned, add the minced garlic to the skillet. Sauté for about 30 seconds, stirring constantly to prevent the garlic from burning.

Deglaze & Add Flavor: Pour the chicken broth into the skillet, using a wooden spoon to scrape up any delicious browned bits stuck to the bottom. Stir in the lemon juice and lemon zest, bringing the mixture to a gentle simmer.

Incorporate the Cheese: Evenly sprinkle the grated Parmesan cheese over the chicken thighs. Reduce the heat to medium-low, cover the skillet, and allow it to cook for another 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is perfectly melted.

Finish with Butter: Remove the skillet from the heat, and stir in the remaining tablespoon of butter until melted, adding a layer of richness to the sauce. Let the chicken rest in the skillet for about 5 minutes to absorb the flavors.

Serve: Garnish the chicken with freshly chopped parsley and lemon slices for a burst of color and flavor. Serve hot alongside your favorite sides, such as roasted vegetables or creamy risotto for a delightful meal.
