4 large bell peppers (any color)

1 pound ground beef

1 cup cooked rice (white or brown)

1 cup black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 cup diced tomatoes (canned or fresh)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon chili powder

1 teaspoon ground cumin

Salt and pepper to taste

1 cup shredded cheddar cheese

½ cup chopped fresh cilantro (optional for garnish)

1 tablespoon olive oil

Prep the Peppers: Preheat your oven to 375°F (190°C). Carefully slice the tops off the bell peppers, removing the stems. Use a spoon to scoop out the seeds and inner membranes. Stand the peppers upright in a baking dish and set aside.

    Cook the Beef: Heat a large skillet over medium heat and add the olive oil. Once the oil shimmers, include the ground beef. Use a spatula to break the meat into small pieces as it cooks. Sauté until browned and fully cooked through, about 5-7 minutes. If there’s excess fat, carefully drain it away.

      Add Ingredients: In the skillet with the cooked beef, add the cooked rice, rinsed black beans, corn, diced tomatoes, garlic powder, onion powder, chili powder, ground cumin, and season with salt and pepper. Stir everything together until well combined. Let the mixture simmer for about 5 minutes to allow the flavors to meld.

        Stuff the Peppers: With a spoon, generously fill each bell pepper with the beef mixture, pressing it down gently to ensure it’s packed tightly. Arrange the stuffed peppers back in the baking dish.
