Instructions

Prepare the Shrimp:

    - In a medium mixing bowl, blend together the olive oil, chili powder, ground cumin, garlic powder, smoked paprika, salt, and pepper to create a marinade. Add the peeled and deveined shrimp to the bowl, tossing them until they are thoroughly coated in the spicy marinade. Cover the bowl and let the shrimp marinate in the refrigerator for at least 15 minutes, or for up to 1 hour for more intense flavor.

      Make the Blueberry Slaw:

        - In a large mixing bowl, combine the finely shredded green cabbage, purple cabbage, fresh blueberries, sliced red onion, and chopped cilantro. In a separate small bowl, whisk together the apple cider vinegar, honey or maple syrup, fresh lime juice, and a pinch of salt and pepper. Pour this dressing over the cabbage and blueberry mixture, tossing gently until all the ingredients are well-coated. Allow the slaw to rest for at least 10 minutes, which will help the flavors to develop and meld together.

          Cook the Shrimp:

            - Heat a skillet over medium-high heat until hot. Add the marinated shrimp in a single layer. Sauté the shrimp for about 2-3 minutes on each side, or until they turn opaque and are cooked through, curling into a C shape. Be careful not to overcook them, as they can become rubbery. Once cooked, remove the skillet from the heat.

              Warm the Tortillas:

                - Using the same skillet, briefly warm the tortillas for approximately 30 seconds on each side until they become pliable. Alternatively, you can warm them directly on a grill or over a stovetop flame for a slightly charred flavor.

                  Assemble the Tacos:

                    - On each tortilla, spread a generous portion of the blueberry slaw. Top it with a portion of the cooked shrimp. For added flavor, garnish the tacos with fresh lime wedges, a sprinkle of extra blueberries, and sliced jalapeños if desired.

                      Serve:

                        - Serve the tacos immediately, allowing each person to assemble their own masterpiece. Enjoy the delightful combination of zesty shrimp and vibrant blueberry slaw!
