1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) pinto beans, drained and rinsed

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, chopped

1 green bell pepper, chopped

1 can (14.5 oz) diced tomatoes, with their juices

2 cups low-sodium chicken broth

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon cayenne pepper (adjust based on your heat preference)

Salt and black pepper to taste

1 tablespoon olive oil

Fresh cilantro and lime wedges for garnish (optional)

Shredded cheese and sour cream for serving (optional)

Instructions
 

Sauté Aromatics: In a large skillet over medium heat, pour in the olive oil. Add the finely chopped onion and sauté for about 5 minutes, or until it becomes soft and translucent. Next, stir in the minced garlic and cook for an additional minute, allowing the garlic to release its fragrant aroma.

    Combine Ingredients in Slow Cooker: Transfer the sautéed onion and garlic mixture into your slow cooker. Add the cut chicken thighs followed by the black beans, kidney beans, pinto beans, diced tomatoes (including the juices), chopped red and green bell peppers, chicken broth, chili powder, ground cumin, smoked paprika, dried oregano, and cayenne pepper. Season with salt and black pepper to taste. Stir everything together until well mixed.
