Savory Lentil and Sausage Shepherd’s Pie

1 cup green or brown lentils, thoroughly rinsed

1 lb Italian sausage (your choice of mild or spicy)

1 medium onion, finely diced

2 carrots, peeled and diced

2 celery stalks, diced

3 cloves garlic, minced

1 cup mushrooms, chopped

1 cup vegetable broth

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and freshly ground black pepper, to taste

4 cups mashed potatoes (either homemade or store-bought)

1 cup grated cheese (cheddar or your preference, optional)

Fresh parsley, finely chopped (for garnish)

Instructions
 

Cook the Lentils: In a medium-sized pot, combine the rinsed lentils with 3 cups of water. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let simmer until the lentils are tender, approximately 25-30 minutes. After cooking, drain any excess water and set the lentils aside.

    Brown the Sausage: In a large skillet over medium heat, add the Italian sausage. Cook in the skillet, breaking it up into smaller pieces with a spatula, until it’s browned and cooked through. This should take about 7-10 minutes. Once cooked, remove the sausage from the skillet and set it aside, leaving the rendered fat in the pan for added flavor.

      Sauté the Vegetables: Using the same skillet, add the diced onion, carrots, and celery. Sauté the vegetables for about 5-7 minutes, or until they become softened. Next, add the minced garlic and chopped mushrooms to the skillet. Continue cooking for an additional 5 minutes, stirring occasionally, until the mushrooms release their moisture and become tender.

        Combine Ingredients: Return the cooked sausage to the skillet, followed by the lentils. Stir in the vegetable broth, tomato paste, Worcestershire sauce, dried thyme, and dried rosemary. Season with salt and freshly ground pepper to taste. Allow the mixture to simmer on low heat for about 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.

          Layer the Pie: Preheat your oven to 400°F (200°C). In a large baking dish, evenly distribute the lentil and sausage mixture at the bottom. Carefully spoon the mashed potatoes over the top, spreading them evenly with a spatula to create a smooth layer. If desired, sprinkle the grated cheese over the mashed potatoes for an extra cheesy topping.

            Bake: Place the assembled baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and crispy, creating a beautiful crust.
