Savory Chicken and Rice Casserole

2 cups uncooked white rice

4 cups low-sodium chicken broth

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups fresh spinach, chopped

1 cup frozen peas and carrots (or fresh if available)

1 teaspoon dried thyme

1 teaspoon paprika

1/2 teaspoon black pepper

1 teaspoon salt (or to taste)

1 cup shredded cheddar cheese

1 tablespoon olive oil

Fresh parsley, chopped, for garnish

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to prepare for baking.

    Sauté the Chicken: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chicken pieces, stirring to coat in the oil. Season with salt, black pepper, dried thyme, and paprika. Cook the chicken for about 5-7 minutes, or until it is browned on the outside and cooked through. Remove the chicken from the skillet and set it aside on a plate.

      Prepare the Aromatics: In the same skillet, add the finely chopped onion and minced garlic. Sauté for about 3-4 minutes, stirring frequently, until the onion becomes translucent and fragrant.

        Combine All Ingredients: In a large mixing bowl, combine the uncooked white rice and chicken broth. Add the chopped spinach, frozen peas and carrots, sautéed onion and garlic, and the cooked chicken. Stir everything together until the mixture is well combined.

          Transfer to Casserole Dish: Grease a 9x13-inch casserole dish with cooking spray or a bit of olive oil. Pour the rice and chicken mixture into the dish, spreading it out evenly to ensure even cooking.
