Ingredients

1 cup butternut squash, peeled and diced into small cubes

1 cup elbow macaroni

4 slices thick-cut bacon, chopped into small pieces

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese, divided

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional, for a touch of heat)

Salt and pepper, to taste

1/4 cup heavy cream

1/4 cup breadcrumbs (for topping)

Fresh parsley, chopped, for garnish

Instructions

Cook the Butternut Squash: In a medium saucepan, bring water to a boil. Add the diced butternut squash and cook until tender, which should take about 10 minutes. Once done, drain and set aside to cool slightly.

Prepare the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to the package instructions until al dente. This usually takes about 7-8 minutes. Drain and set aside.

Cook the Bacon: In a large skillet over medium heat, add the chopped bacon and cook until crispy and browned, stirring occasionally, for about 5-7 minutes. Once cooked, remove the bacon pieces using a slotted spoon and drain them on a paper towel-lined plate. Leave the rendered fat in the skillet for flavor.

Make the Cheese Sauce: In the same skillet with the bacon fat, reduce the heat to low and add the cooked butternut squash. Use a fork or potato masher to mash it slightly, creating a chunky texture. Stir in the heavy cream, garlic powder, onion powder, smoked paprika, and cayenne pepper. Season with salt and pepper to taste. Cook for 2-3 minutes until well-heated.

Combine Ingredients: Remove the skillet from heat. Fold in the cooked macaroni, crispy bacon, shredded cheddar cheese, and half of the grated Parmesan. Stir gently until everything is thoroughly mixed and the cheese is melted.

Prepare for Baking: Preheat your oven to 350°F (175°C). Grease a mini muffin tray with cooking spray or butter. Using a spoon or scoop, fill each muffin cup with the mac and cheese mixture until they're almost full.

Top with Breadcrumbs: In a small bowl, combine the remaining grated Parmesan cheese with the breadcrumbs. Sprinkle this mixture evenly over the filled muffin cups for added crunch.

Bake: Place the muffin tray into the preheated oven and bake for 15-20 minutes, or until the tops are golden brown and crispy.

Cool and Serve: Once baked, allow the mac bites to cool for a few minutes in the tray. To help release them, run a butter knife gently along the edges before lifting them out. Garnish with chopped fresh parsley for a burst of color and flavor before serving.
