Savory Beef and Bean Chili in 30 Minutes

1 lb lean ground beef

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 medium yellow onion, finely diced

3 cloves garlic, minced

1 red bell pepper, diced into small pieces

1 can (14.5 oz) diced tomatoes, including their juices

2 tablespoons chili powder

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/2 teaspoon dried oregano

1/4 teaspoon cayenne pepper (adjust based on spice preference)

Salt and freshly ground black pepper to taste

2 tablespoons olive oil

Optional toppings: shredded cheese, sour cream, sliced green onions, diced avocado

Instructions
 

Heat the Pan: In a large pot or Dutch oven, pour in the olive oil and warm it up over medium heat until it shimmers.

    Sauté Aromatics: Add the diced yellow onion and red bell pepper to the pot. Sauté for about 3-4 minutes, or until they soften and the onion is translucent. Then, introduce the minced garlic and continue to sauté for an additional minute, until the garlic is fragrant but not browned.

      Brown the Beef: Increase the heat to medium-high. Add the ground beef to the pot, using a wooden spoon to break it apart. Cook for about 5-6 minutes until the beef is nicely browned and no longer pink. If there's excess fat, drain it off carefully.

        Spice it Up: Once the beef is browned, sprinkle in the chili powder, cumin, smoked paprika, oregano, cayenne pepper, and a pinch of salt and pepper. Stir well and allow the spices to cook for 1-2 minutes, until they release their aroma.
