Sausage and Potato Breakfast Skillet

4 medium russet potatoes, diced into small cubes

1 lb (450g) breakfast sausage (pork, turkey, or your preferred variety)

1 medium onion, diced

1 bell pepper (red or green), diced

2 cloves garlic, minced

1 tsp smoked paprika

½ tsp black pepper

½ tsp salt (or adjust to taste)

½ tsp dried thyme

4 large eggs

2 tbsp olive oil

Fresh parsley or chives, chopped (for garnish)

Hot sauce (optional, for serving)

Instructions
 

Cook the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt, black pepper, and smoked paprika. Stir well to coat the potatoes in the seasoning. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are fork-tender and crispy.

    Prepare the Sausage: While the potatoes are turning golden, heat the remaining tablespoon of olive oil in a separate pan over medium heat. Add the breakfast sausage to the pan, breaking it apart with a spatula. Cook until the sausage is browned and fully cooked, about 5-7 minutes. Once done, remove the sausage from the skillet and set aside, leaving the flavorful drippings in the pan.

      Sauté Vegetables: In the same skillet with the saved sausage drippings, add the diced onion and bell pepper. Sauté for about 5 minutes, or until the vegetables start to soften. Then, add the minced garlic and dried thyme, continuing to stir for another 2 minutes until fragrant and the vegetables are tender.

        Combine Ingredients: Once the onions and peppers are softened, return the cooked sausage to the skillet alongside the crispy potatoes. Stir everything together to mix well, and cook for an additional 5 minutes over medium heat, allowing the flavors to meld and intensify.

          Add Eggs: Create four small wells in the mixture and carefully crack an egg into each well. Cover the skillet with a lid and let the eggs cook for about 5-7 minutes, or until the egg whites are set and the yolks reach your desired level of doneness (runny or fully cooked).

            Garnish & Serve: Once the eggs are cooked to your liking, remove the skillet from heat. Garnish with freshly chopped parsley or chives for a pop of color and freshness. Serve hot, with a splash of hot sauce on the side if you enjoy a bit of heat.
