4 bone-in pork chops, approximately 1 inch thick

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

1 medium onion, thinly sliced

2 medium apples (choose between Granny Smith or Honeycrisp), cored and sliced

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon ground cinnamon

½ cup apple cider

1 tablespoon Dijon mustard

2 tablespoons brown sugar

2 tablespoons balsamic vinegar

Fresh parsley, finely chopped (for garnish)

Prepare the Pork Chops: Begin by patting the pork chops dry with paper towels—this helps achieve a perfect sear. Generously season both sides of each chop with salt and freshly ground black pepper.

    Sear the Pork Chops: In a large skillet over medium-high heat, add the olive oil. Once hot, carefully place the pork chops into the skillet. Sear them without moving for about 4-5 minutes on each side until they develop a beautiful golden-brown crust. Once done, remove the chops from the skillet and set them aside on a plate.

      Sauté the Onions and Apples: In the same skillet with the residual oil, add the thinly sliced onions and apple slices. Sauté for about 4-5 minutes, stirring occasionally, until the onions become translucent and the apples begin to soften.

        Incorporate Aromatics: Stir in the minced garlic, fresh thyme, and ground cinnamon. Allow these to cook for an additional minute, stirring until fragrant.

          Create the Sauce: Pour in the apple cider while scraping the bottom of the skillet to deglaze. Add the Dijon mustard, brown sugar, and balsamic vinegar. Stir until all ingredients are well combined, and bring the mixture to a gentle simmer.

            Return the Pork Chops: Place the seared pork chops back into the skillet, using a spoon to drizzle some of the sauce over the top of each chop. Reduce the heat to low, cover the skillet, and let it simmer for approximately 10-15 minutes, or until the internal temperature of the pork reaches 145°F (63°C) for juicy and tender chops.
