Salmon Tacos with Mango Slaw

For the Salmon:

1 lb (450g) fresh salmon fillet, skin removed

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and black pepper to taste

Juice of 1 lime

For the Mango Slaw:

1 ripe mango, peeled and diced into small cubes

2 cups green cabbage, finely shredded

1/2 cup carrots, shredded (approximately 1 medium carrot)

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon honey (or agave syrup for a vegan alternative)

Salt and black pepper to taste

For Serving:

8 small corn or flour tortillas

Lime wedges for serving

Extra cilantro for garnish

Prepare the Salmon Marinade: In a small mixing bowl, whisk together the olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, black pepper, and lime juice until well combined. Place the clean salmon fillet in a shallow dish and pour the marinade over it. Ensure the salmon is fully coated. Cover the dish and let it marinate in the refrigerator for at least 20 minutes to absorb the flavors.

    Make the Mango Slaw: In a large mixing bowl, combine the diced mango, shredded cabbage, shredded carrots, thinly sliced red onion, and chopped cilantro.
