Roasted Peach and Burrata Salad

4 ripe peaches, halved and pitted

2 tablespoons extra virgin olive oil, plus more for drizzling

1 tablespoon honey

Sea salt and freshly ground black pepper, to taste

5 ounces burrata cheese

4 cups mixed baby greens (such as arugula, spinach, and frisée)

1/4 cup walnuts, toasted and roughly chopped

1/4 cup thinly sliced prosciutto (optional)

2 tablespoons balsamic glaze

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Set your oven to 400°F (200°C) to prepare for roasting the peaches.

    Prepare the Peaches: In a large mixing bowl, take the halved peaches and drizzle them with 2 tablespoons of olive oil, then add the honey, sea salt, and freshly ground black pepper. Gently toss the peaches until they are evenly coated with the mixture.

      Roast the Peaches: Arrange the peach halves, cut side facing up, on a baking sheet lined with parchment paper. Roast them in the preheated oven for approximately 20 minutes, or until they are tender and beautifully caramelized. Once done, remove the baking sheet from the oven and allow the peaches to cool slightly.

        Assemble the Mixed Greens: In a large salad bowl, combine the mixed greens. Drizzle a little olive oil over them, add a pinch of sea salt, and gently toss until the greens are lightly dressed.

          Add the Roasted Peaches and Burrata: Layer the roasted peach halves on top of the mixed greens, and add generous spoonfuls of creamy burrata cheese atop the peaches. If desired, artfully layer the thin slices of prosciutto on top of the salad.
