2 large heads of garlic

2 tablespoons extra virgin olive oil, plus more for drizzling

1 teaspoon dried thyme

1 teaspoon dried oregano

1 medium zucchini, thinly sliced into rounds

1 red bell pepper, sliced into thin strips

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

1 cup crumbled feta cheese (omit for a vegan version)

4 pieces of flatbread or pita bread

Sea salt and freshly cracked black pepper, to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Carefully slice the top off each garlic head to expose the cloves. Drizzle with a tablespoon of olive oil and wrap each head in aluminum foil. Place on a baking sheet and roast for 30 to 35 minutes, until the cloves are soft and golden brown. Once done, let them cool for a few minutes. Squeeze the softened garlic into a bowl and use a fork to mash it into a smooth paste.

    Prepare the Vegetables: In a large mixing bowl, combine the thinly sliced zucchini, strips of red bell pepper, halved cherry tomatoes, and fresh spinach. Drizzle with one tablespoon of olive oil and sprinkle over the dried thyme, oregano, sea salt, and black pepper. Toss everything together until the vegetables are well-coated with oil and seasonings.
