1 cup heavy whipping cream

1/2 cup powdered sugar

1/2 teaspoon vanilla extract

8 ounces cream cheese, softened to room temperature

1/4 cup raspberry puree (can be made with fresh or frozen raspberries)

For the Raspberry Swirl:

1/2 cup fresh raspberries

2 tablespoons granulated sugar

1 tablespoon lemon juice

For the Chocolate Base:

1 cup chocolate cookie crumbs (like Oreos, crushed finely)

4 tablespoons unsalted butter, melted

Instructions
 

Prepare the Chocolate Base:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine the chocolate cookie crumbs with melted butter. Mix until the crumbs are thoroughly coated and resemble damp sand.

        - Press the crumb mixture firmly into the bottom of silicone molds or a mini muffin tin, forming a solid base. Bake in the preheated oven for 5-7 minutes until set, then remove and allow to cool completely while you make the mousse.

          Make the Raspberry Swirl:

            - In a small saucepan over medium heat, combine fresh raspberries, granulated sugar, and lemon juice. Cook for approximately 5 minutes, using a fork or potato masher to gently mash the raspberries and help them release their juices until the mixture becomes syrupy. Remove from heat and allow it to cool slightly.

              Prepare the Mousse:

                - In a large mixing bowl, use an electric mixer to whip the heavy cream until soft peaks form. Gradually add in the powdered sugar and vanilla extract, continuing to mix until stiff peaks form.

                  - In another bowl, beat the softened cream cheese until smooth and creamy. Carefully fold the whipped cream into the cream cheese in small batches, taking care not to deflate the mixture.
