Quick Turkey and Spinach Stuffed Peppers

4 large bell peppers (any color you prefer)

1 pound ground turkey

2 cups fresh spinach, roughly chopped

1 cup cooked quinoa (or substitute with cooked rice)

1 cup diced tomatoes (can be canned or fresh)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded mozzarella cheese

2 tablespoons olive oil

Fresh parsley or basil for garnish (optional)

Instructions
 

Begin by preheating your oven to 375°F (190°C).

    Prepare the bell peppers: Slice the tops off and carefully remove the seeds and membranes. Use a brush to lightly coat the outside of each pepper with olive oil, then place them in a baking dish with the cut sides facing up.

      In a large skillet, heat the remaining olive oil over medium heat. Add the finely chopped onion and sauté until soft and translucent, about 3-4 minutes.

        Incorporate the minced garlic and ground turkey into the skillet. Cook while stirring regularly until the turkey is browned and cooked through, approximately 5-7 minutes.

          To the skillet, add the chopped spinach, cooked quinoa (or rice), diced tomatoes, and your seasonings (Italian seasoning, paprika, salt, and pepper). Stir everything together and continue cooking for an additional 2-3 minutes, allowing the spinach to wilt.

            Remove the skillet from the heat and stir in half of the shredded mozzarella cheese, combining it well with the turkey and spinach mixture.

              Carefully stuff each prepared bell pepper with the turkey filling, pressing down gently to ensure the mixture is packed into the peppers.

                Sprinkle the remaining mozzarella cheese evenly over the top of each stuffed pepper.

                  Cover the baking dish with aluminum foil to keep the moisture in, then place it in the oven and bake for 20 minutes. After that, remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

                    Once finished, carefully remove the dish from the oven and let it cool for a few minutes. Garnish with fresh parsley or basil before serving to add a burst of color and freshness.
