Quick Teriyaki Salmon with Rice and Broccoli

4 salmon fillets (6 oz each)

½ cup low-sodium soy sauce

¼ cup honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 cups jasmine rice

4 cups broccoli florets

2 tablespoons sesame seeds (for garnish)

2 green onions, thinly sliced (for garnish)

Prepare the Marinade: In a medium bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated ginger until fully blended and smooth.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the marinade over them. Turn the fillets to ensure they are evenly coated. Allow them to marinate for a minimum of 15 minutes (for a more intense flavor, refrigerate and marinate for up to 1 hour).

      Cook the Rice: While the salmon is marinating, rinse the jasmine rice under cold water until the water runs clear to remove excess starch. In a medium saucepan, combine the rinsed rice, 4 cups of water, and a pinch of salt. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 15 minutes, or until the rice is tender and all the water has been absorbed.

        Steam the Broccoli: In the last 5 minutes of the rice cooking, bring a separate pot of water to a boil. Place a steamer basket over the pot, add the broccoli florets, cover, and steam for about 5 minutes until they are bright green and tender yet still crisp. Remove from heat and set aside.

          Cook the Salmon: Preheat your grill or stovetop skillet over medium-high heat. Take the salmon fillets out of the marinade, discarding the marinade. Season the fillets lightly with salt and pepper. Grill the salmon for approximately 4-5 minutes on each side, until the center is opaque and flakes easily with a fork.

            Prepare the Glaze: In a small saucepan, bring the remaining marinade to a rolling boil over medium heat. Allow it to simmer for 3-4 minutes until it thickens slightly. Brush this flavorful glaze generously over the cooked salmon fillets just before serving.

              Serve: Fluff the jasmine rice with a fork, dividing it equally among plates. Place the teriyaki salmon fillets on top of the rice, and arrange the steamed broccoli on the side. Drizzle any remaining glaze over the salmon, then sprinkle sesame seeds and sliced green onions on top for an eye-catching garnish.
