2 cups fresh spinach, roughly chopped

2 tablespoons extra virgin olive oil

3 cloves garlic, finely minced

1 teaspoon fresh ginger, finely minced

1 teaspoon red chili flakes (adjust according to spice preference)

1 teaspoon ground cumin

1 tablespoon soy sauce (or tamari for a gluten-free option)

1 tablespoon freshly squeezed lemon juice

Salt and pepper to taste

Cooked rice or quinoa, for serving (optional)

Instructions
 

Heat the Oil: In a large skillet or wok, pour the olive oil and heat it over medium-high heat until shimmering.
