1 pound ground turkey

2 medium sweet potatoes, peeled and diced into ½-inch cubes

1 red bell pepper, diced

1 small yellow onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon chili powder (adjust to taste)

2 tablespoons olive oil

Salt and pepper, to taste

Fresh parsley or cilantro, chopped (for garnish)

Optional: ½ cup black beans, drained and rinsed

Instructions
 

Prepare the Sweet Potatoes:

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once the oil is shimmering, add the diced sweet potatoes. Season with salt and pepper.
