Ingredients

2 boneless, skinless chicken breasts (approximately 1 pound)

8 ounces fettuccine or penne pasta

1 cup fresh broccoli florets

1 cup frozen peas

3 tablespoons extra virgin olive oil

3 cloves garlic, finely minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and black pepper to taste

A pinch of red pepper flakes (optional, for a spicy kick)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta and Vegetables:

    - Fill a large pot with water, season generously with salt, and bring it to a rolling boil.

      - Add your pasta and cook according to package directions until it achieves an al dente texture.

        - In the last 3 minutes of cooking, add the broccoli florets and frozen peas to the pot.

          - Once cooked, drain the pasta and vegetables, then set aside.

            Season and Prepare the Chicken:

              - While the pasta is cooking, season both sides of the chicken breasts with salt, black pepper, and if you enjoy some heat, a pinch of red pepper flakes.

                Sauté the Chicken:

                  - In a large skillet, heat the olive oil over medium heat.

                    - Add the seasoned chicken breasts to the skillet and cook for about 5-7 minutes per side, or until the chicken is cooked through and exhibits a golden brown color.

                      - Once done, transfer the chicken to a cutting board and allow it to rest for a few minutes, then slice it into strips.

                        Prepare the Alfredo Sauce:

                          - In the same skillet (with the remaining oil), add the minced garlic and sauté for approximately 1 minute until it becomes fragrant, being cautious not to burn it.

                            - Carefully pour in the heavy cream, bringing it to a gentle simmer while stirring.

                              - Gradually add the freshly grated Parmesan cheese, stirring continuously until it is fully melted and the sauce is creamy and smooth.

                                - Taste and season the sauce with salt and black pepper as needed.

                                  Combine the Ingredients:

                                    - Gently add the drained pasta, broccoli, and peas into the skillet with the Alfredo sauce.

                                      - Place the sliced chicken atop the pasta and sauce, and gently toss everything together until every ingredient is well coated in the creamy sauce.

                                        Plate and Serve:

                                          - Serve the Creamy Chicken Alfredo with Broccoli & Peas in generous portions.

                                            - Garnish with a sprinkle of freshly chopped parsley for a delightful pop of color and flavor, and enjoy your dish!
