2 cups cooked rice (white or brown)

1 cup mixed vegetables (carrots, peas, bell peppers, corn)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup milk

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

1/2 cup grated Parmesan cheese (for topping)

Fresh parsley or chives (for garnish, optional)

Preheat the Oven: Set your oven temperature to 375°F (190°C) to ensure it's ready for baking.

    Prepare Vegetables: If you are using fresh vegetables, wash and chop them into uniformly small pieces for even cooking. For frozen mixed vegetables, simply thaw and drain any excess water.

      Mix the Base Ingredients: In a large mixing bowl, combine the cooked rice with the mixed vegetables, shredded cheddar cheese, and mozzarella cheese. Mix well to evenly distribute all ingredients.

        Whisk the Egg Mixture: In a separate bowl, crack the eggs and whisk them together with the milk, garlic powder, onion powder, dried oregano, salt, and pepper. Mix until all ingredients are thoroughly combined and frothy.
