1 lb (450g) beef sirloin, thinly sliced against the grain

1 large red bell pepper, cut into strips

1 large yellow bell pepper, cut into strips

1 medium onion, thinly sliced

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (for cooking)

1 teaspoon sesame oil

Salt and pepper, to taste

Marinate the Beef: In a medium-sized mixing bowl, combine the thinly sliced beef with soy sauce, oyster sauce, and cornstarch. Mix thoroughly to ensure the beef is evenly coated. Allow it to marinate for at least 15 minutes while you prepare the other ingredients.

    Prep the Vegetables: While the beef is marinating, slice the bell peppers and onion into strips, and mince the garlic. Set all the prepared vegetables aside for easy access when cooking.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over high heat. The oil should shimmer to indicate it's hot enough for cooking.
