Ingredients

1 lb (450g) ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, finely diced

3 cloves garlic, minced

1 red bell pepper, finely diced

1 jalapeño, finely diced (or to taste for spiciness)

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

2 cups beef broth

2 tablespoons olive oil

Optional toppings: sour cream, shredded cheese, chopped green onions, fresh cilantro

Instructions

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the finely diced onion, minced garlic, red bell pepper, and diced jalapeño. Sauté the mixture for 5 minutes, or until the onions are translucent and the peppers have softened.

Brown the Beef: Move the sautéed vegetables to one side of the pot and add the ground beef to the empty side. Cook the beef for approximately 6-8 minutes, using a wooden spoon to break it apart. Cook until browned and no longer pink. Drain any excess fat if necessary.

Add Spices and Beans: Sprinkle in the chili powder, ground cumin, smoked paprika, salt, and black pepper. Mix well to combine. Then, add the drained kidney beans, black beans, the can of diced tomatoes (including the juices), and the beef broth. Stir everything together until fully combined.

Simmer the Chili: Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low and allow the chili to simmer uncovered for 20-25 minutes. Be sure to stir occasionally to prevent sticking to the bottom of the pot.

Taste and Adjust Seasoning: After simmering, give your chili a taste. Adjust the seasoning as needed—if you prefer it spicier, add more chili powder or a splash of hot sauce for extra heat.

Serve and Enjoy: Ladle the hot chili into bowls and garnish with your choice of toppings such as a dollop of sour cream, a sprinkle of shredded cheese, chopped green onions, or fresh cilantro for added flavor and freshness.
