Ingredients

2 cups cooked rice (white or brown)

2 cups shredded rotisserie chicken

1 cup BBQ sauce (your favorite brand)

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup shredded cheddar cheese

1/2 cup diced onions

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it’s hot and ready for baking.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onions. Sauté for about 3-4 minutes, stirring occasionally, until the onions turn translucent and fragrant.

Combine Chicken and Rice: In a spacious mixing bowl, add the cooked rice, shredded chicken, sautéed onions, frozen mixed vegetables, BBQ sauce, garlic powder, smoked paprika, and a sprinkle of salt and pepper. Stir well until all the ingredients are thoroughly combined and coated in the BBQ sauce.

Layer the Casserole: Grease a 9x13 inch casserole dish with a bit of olive oil to prevent sticking. Spoon half of the chicken and rice mixture into the dish, spreading it evenly across the bottom. Sprinkle half of the shredded cheddar cheese on top to create a cheesy layer.

Add Another Layer: Next, pour the remaining chicken and rice mixture over the first cheese layer, spreading it out evenly. Finally, top with the rest of the shredded cheese for a gooey finish.

Bake: Cover the casserole dish with aluminum foil to keep moisture in. Place it in the preheated oven and bake for 25 minutes. After this initial time, carefully remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted, bubbly, and golden brown.

Serve: Once out of the oven, let the casserole cool for a few minutes to set. If desired, garnish with fresh parsley for a pop of color before serving.

Enjoy: Use a large spoon to scoop out generous portions. This cozy and flavorful BBQ Chicken and Rice Casserole is perfect for a family meal or gathering!
