1 cup rolled oats

1/2 cup pumpkin puree

1/3 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/2 cup almond flour (or any preferred flour)

1 teaspoon baking powder

1 teaspoon pumpkin pie spice (or a blend of ground cinnamon, nutmeg, and ginger)

Pinch of salt

1/4 cup raisins or chocolate chips (optional for sweetness)

1/4 cup chopped nuts (such as walnuts or pecans, optional for crunch)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, honey (or maple syrup), melted coconut oil, and vanilla extract. Using a whisk or a fork, stir these ingredients together until you achieve a smooth and well-blended mixture.

      Combine Dry Ingredients: In a separate bowl, mix the rolled oats, almond flour, baking powder, pumpkin pie spice, and a pinch of salt. Stir thoroughly to ensure there are no clumps, allowing the flavors to distribute evenly.

        Combine Mixtures: Gradually incorporate the dry mixture into the wet mixture, stirring gently until everything is completely blended. If you’re adding raisins, chocolate chips, or chopped nuts, fold them in at this stage for an extra burst of flavor and texture.

          Shape the Cookies: Using a tablespoon or a cookie scoop, drop generous spoonfuls of the dough onto the prepared baking sheet.
